5 MIN. MINI CAKE

 
If you love baking, but you are too busy...
 
Don't worry, this simple but yummy mini cake only needs 5 minutes of your time ;)
 
 
♥ You will need ♥
 
Organic Brown Rice Flour
Raspberries
Peanut Butter
Egg
1/5 cup water
 
 
Boil raspberries with 1/5 cup water until juice comes out, then set aside cool.
 
Mix egg yolk, organic brown rice flour, peanut butter & cooked raspberries. 
 
 
You can also add fresh raspberries to the mix if you want some texture when it's done.
 
 
Whip egg white until the meringue no longer slides in the bowl
 
 
Carefully mix half of the mixture to whipped egg white, then add the rest.
 
 
Okay, we are nearly done.
 
 
We just got this cute little piggy cake mold, you can use cupcake mold or any type of microwave proof mold.
 
Fill the mold with the mix, you can fill it full as we don't use baking powder.
 
Now put it in MICROWAVE, yes, microwave.
 
2 minutes.
 
But depends on your microwave and the mold size, so when you start to smell yummy peanut butter & raspberry, stick toothpick or fork slightly in the center. If the comes out clean without any mixture on it, then you are done!
