One of our favorite menu for the brunch ♥
Sweet Potato & Quinoa Waffle ♥
Just too easy to fail, so don't be scared of trying!
♥ You will need ♥
Organic Brown Rice Flour
Mashed Cooked Sweet Potato
Cooked Organic Quinoa
Pure Honey
Beat egg in a bowl until well mixed, then add sweet potato and honey and beat again.
Add organic brown rice flour, stir well, then add quinoa, stir again.
Add some water if the batter is too thick to handle as some sweet potatoes are watery, and some are not. Just think of pancake batter, not too runny but not too thick.
Use your waffle iron to cook yummy waffles.
We served with Greek yogurt, raspberries & blueberries. ♥
