How can we not LOVE cupcakes?!
While we are baking yummy carrot cupcakes with cream cheese frosting (Yum~ ♥) for our afternoon tea time, we also made carrot pupcakes for our pooches as well.
As we were kinda in a hurry, we didn't take detail shots, but just in case any of you are still interested in this yummy carrot pupcakes, here you go!
♥ You will need ♥
Organic Brown Rice Flour
Organic Oat Flour
Organic Chicken Breast (Cooked and shredded)
2 Eggs
Pure Honey
Shredded Carrot
Coconut Oil
Cinnamon
In a bowl, beat egg yolks then add coconut oil & pure honey and mix until well combined.
Sift dry ingredients into the egg mixture, and add shredded carrot, set aside.
Beat egg whites with electronic mixer until the meringue no longer slides in the bowl.
Carefully fold egg whites to egg yolk mixture.
Do not over mix, just carefully fold.
Fill lined cupcake pan 1/3 with pupcake mixture, then add shredded cooked chicken, then pour mixture over to fill 3/4 of pan.
Bake at 170°C for 30 minutes, but it totally depends on your pupcake size and oven, so watch carefully not to burn. Just bake until cupcake tester comes out clean.
Cool completely on a rack before frosting.
Okay, yummy carrot pupcakes are ready, now it's the frosting!
♥ For the Frosting ♥
Carrot Puree
Cooked & mashed sweet potato
Cream Cheese
Beat cream cheese with electronic mixer until flurry, then add carrot puree & sweet potato, beat again.
Add more carrot puree until desired consistency.
Frost on cooled pupcake, and sprinkle with cookie crumbs if you want.
Ta~da!
Now we are ready for our tea time!
Just in case some of you are not so sure of baking these cupcakes, we promise to do more accurate measuring for the each ingredients next time. But as mentioned previously, we are so not good at measuring stuff. :)
Anyway, hope some of you may have courage to start baking some yummy pupcakes with this messy recipe. Don't worry, your pooches won't judge you even if you didn't bake perfectly. That's why we love them so much, isn't it? ;)
