HOLIDAY BISCOTTI ♥

 
Holiday biscotti anyone?
 
We are baking few extra batches for our friends, and Samuel is helping out ♥
 
♥ You will need ♥
 
1/2 cup Organic Brown Rice Flour
1/4 cup Organic Coconut Flour
1/4 cup Organic Coconut Oil
2 TBSP Organic Raw Honey 
1/4 cup Organic Coconut Flakes
1/4 cup Organic Coconut Flakes
1/4 cup Pumpkin Seeds
1/4 cup Cranberries
 2 TBSP Water
 
Pre-heat your oven to 175°C.
 
Line a baking tray with parchment paper, set aside.
 
In a mixing bowl, mix all the ingredients and mix well. Add little more water if the batter is too thick.
 
Divide batter into two, then shape rectangular form and place on baking tray.
 
Cover with wrap, and place in a freezer for 5 minutes, then bake for 30 minutes or until top is light golden brown, remove from the oven.
 
Cool on a tray for 10 minutes, then carefully slice.
 
Lay each slice on it's side, separating them on the baking tray. Bake an additional 15 minutes or until it's golden brown.
 
Remove from the oven, and cool completely.
 
 
 
 
Okay, it's all nicely done, and smells really good!!

SWEET POTATOES & QUINOA BREAKFAST COOKIES ♥


Breakfast cookies anyone?
 
Get ready to bake simple but yummy breakfast cookies for your babies this morning ♥
 
♥ You will need ♥
 
Cooked Sweet Potatoes
Cooked Organic Chicken Breast (Chopped)
Cooked Organic Quinoa
Coconut Flour
Coconut Oil
Organic Egg
Coconut Flakes (Optional) 
 
Pre-heat your oven 180°C.
 
Mix all the ingredients in a bowl. Add little water to the mixture if it's too dry.
 
Make small ball shape, then add coconut flakes on top.
 
Place balls in a baking tray, then bake for 30 minutes or until it's cooked well. Time may vary depends on the size of balls and the oven, so watch carefully not to burn ;)
 
 

 
Ta-da! It's nicely done!!
 
Cool them on a baking tray.

We usually have fish meal at least once a week, and today is the fish meal day ♥
 
 
Chopped pumpkin, broccoli, carrot, blue berries with cod fish drizzled with organic coconut oil, baked in oven ♥

SUNDAY LUNCH ♥

 
How is everyone enjoying Sunday?
 
Seems like weekend goes faster than weekdays, don't you think?
 
We had yummy Sunday lunch today, pumpkin & carrot quinoa soup with oven baked chicken ♥
 
Yummy~ ♥ ♥ ♥
 
 
♥ You will need ♥
 
Pumpkin
Carrot
Organic Quinoa
Chicken Stock
Oven Baked Organic Chicken Breast
Organic Cottage Cheese
 
 
Chop pumpkin & carrot into small chunky pieces
 
In a pot, add quinoa, pumpkin, carrot and chicken stock, cook about 20 minutes or until everything is well cooked.
 
Remove from the stove, blend well until everything is smooth. If you think the soup is too thick, add some more chicken stock.
 
Serve in a dish with cottage cheese & oven baked chicken.
 
We also added diced celery (cooked), blueberry and sprinkled pinch of cinnamon.

SHREK SOUP ♥

 
What are you having for lunch today?
 
We are having SHREK SOUP with chicken meal......yes, we call it Shrek soup just because it's green, heehee ♥
 
 
♥ For Soup : You will need ♥
 
Pumpkin with green skin
Chicken Stock
 
♥ For Chicken Meal : You will need ♥
 
Organic Chicken Breast
Celery
Carrot
Steel Cut Oats
 
Cut pumpkin into big chunks with skin on, then boil in a pan with chicken stock. When pumpkin is cooked, blend until it's all smooth. Soup is ready :) Easy, isn't it?
 
Cook organic chicken breast, celery & carrot in water until everything is cooked.
 
In separate pan, cook steel cut oats with water.
 
When it's cooked, mix with chicken.
 
Serve chicken meal with soup.

BANANA OAT MUFFIN ♥

 
Anyone up for muffin?
 
We just baked yummy Banana Oat Muffin for our babies' afternoon tea time.
 
Lovely treats for Friday afternoon.
 
♥ You will need ♥
 
2 Bananas (Plus extra for topping)
Organic Brown Rice Flour 1 1/2C
Organic Rolled Oats 1C
Greek Yogurt 1/2C
Organic Coconut Oil 1/2C
1 Egg
 
 
Preheat your oven at 200°C.
 
Blend bananas, coconut oil, yogurt & egg york until well mixed.
 
Add dry ingredients to banana mixture, set aside.
 
Beat egg whites with electronic mixer until the meringue no longer slides in the bowl.
 
Carefully fold egg whites to banana mixture.
 
Do not over mix, just carefully fold.
 
 
Fill muffin pan with mixture, and top with sliced banana & sprinkle cinnamon.
 
Bake at 200°C for 20 minutes, but it totally depends on your muffin size and oven, so watch carefully not to burn. Just bake until it's fully baked.
 
Cool them in muffin pan.

BAKED BEEF & RICE BALL ♥

 
Mood for cooking?
 
We just baked yummy beef & rice ball, it may take little bit for prep & baking, but worth a try! Your babies will def love this! ♥
 
 
♥ You will need ♥
 
Minced Organic Beef
Cooked Rice
Organic Egg
Chopped Carrot
Organic Cottage Cheese
Chia Seed
Coconut Flakes
 
Pre-heat your oven 220°C.
 
Put coconut flakes in a small bowl, and set aside.
 
In a separate bowl, mix all the ingredients.
Make small ball shape, then toss in a bowl with coconut flakes.
 
Place balls in a baking tray, then bake for 30 minutes or until it's cooked well. Time may vary depends on the size of balls and the oven, so watch carefully not to burn ;)
 
 
 
 Ta-da! It's nicely done!!
 
Cool them on a baking tray.
 
 
We also served with pumpkin & quinoa puree.
 
 
Samuel just love it so much!

EASY & YUMMY BAKED SALMON ♥

 
One of the dish when we are little busy.
 
Quick, but simply delicious!
 
 
♥ You will need ♥
 
Salmon Fillet
Cooked Organic Quinoa
Celery
Carrot
Purple Cabbage
 
Chop veggies and salmon into small pieces.
In a ovenware, layer quinoa, veggies and salmon.
Bake at 220°C for 25 minutes or more depends on the oven and the size of the salmon.  
 
Now we are ready.
We served with piece of boiled egg as well.

HOLIDAY BRUNCH ♥

 
Aww.... not sure if it's a dream... but got up late, snuggling with our babies in bed without worrying about going to work.... It's really happening! Yay! The best thing on holiday morning!! ♥
 
Been on "COOKING MODE" for few days and we are pretty much pooped, so just having easy Dutch Baby for the brunch.
 
And also made another version for our babies....
 
Yep, admit it kinda failed, the pancake didn't rise much as ours after using coconut flour and omit the milk... :(
 
But seriously smells better with coconut flour.
 
So glad our babies never complain when the cooking go bad as long as it tastes good. Heehee~
 
Will have to work on the recipe for the "PERFECT" pooch version of Dutch Baby, but if you still want to try this "OVEN BAKED PANCAKE" (couldn't call this Dutch Baby....), here is the recipe.
 
 
♥ You will need ♥
 
3 Organic Eggs
1/4 Cup Organic Coconut Flour (Sifted)
2 TBSP Organic Raw Honey
1/4 Cup Organic Greek Yogurt
1/2 Cup Cooked Organic Chicken Breast (Chopped)
Handful of Blueberries
1 TBSP Coconut Oil
 
Preheat your oven at 230°C.
Put the bakeware in the oven, wait till the bakeware gets really hot.
 
In a bowl, whisk eggs with electronic mixer for 2 minutes or until it's very smooth and silky.
Add coconut flour, honey & Greek yogurt, and whisk to mix well, set aside.
 
Take out the hot bakeware from the oven, and add coconut oil around the bakeware.
Pour the batter in the bakeware, then top with chicken breast and blueberries.
 
Bake for about 15 minutes or until the top is golden brown, baking time may vary depends on the size of your pancake and the oven.
 
Cool in a bakeware, then serve. ♥
 
If we get to work around the better recipe to get the perfect Dutch Baby, will do another post later.

FISH & PUMPKIN SOUP ♥

 
As the weather gets colder and colder everyday, we cook more meals with soup.
 
Today we are having Fish & Pumpkin Soup, and seriously the easy one!
 
 
♥ You will need ♥
 
Fish Fillet (We used Cod fish today)
Pumpkin
Celery
Capsicum
Cooked Organic Brown Rice
  
 
Chop the ingredients into bite sizes.
 
Coat fish cubes with spoon of coconut oil (if you have) set aside.
 
Put all the ingredients in a pan, add some water, then boil until everything is cooked.
 
Now you are done. Easy as promised, huh?
